The eggplant parmesan is an authentic Italian dish from the region of Campania, Italy. Some Key Biscayne restaurants serve this traditional dish. Here is how you can make it at home for 6 people:
- 2.5lbs of eggplants
- 2 cans of tomato sauce
- fresh mozzarella (small size)
- Parmesan Cheese
- Peanut oil for frying
- Olive Oil
- Salt and Pepper
Thinly slice the eggplant and put under water and salt for 20 minutes. Meanwhile, you can prepare the tomato sauce which is simple. In a sauce pan, add both cans of tomato and put under heat.
Once eggplants have soaked for 20 minutes, gently dry with paper towel and fry with the peanut oil.
Once eggplants are ready, place just a few to only cover the bottom of a deep oven pan as shown in the picture.
Add on top of layer of eggplants pieces of mozzarella, parmesan cheese, tomato sauce, a dash of salt & pepper and a tablespoon of olive oil. Add a new layer of eggplant and repeat process until you consume all ingredients.
Enclose with tomato sauce and place in oven at 355 degrees for 30-40 minutes until golden.
